qu\u00e9 consiste el proceso de liofilizaci\u00f3n y sus excelentes resultados a la hora de conservar aroma y sabor de nuestro caf\u00e9, pero en t\u00e9rminos pr\u00e1cticos \u00bfqu\u00e9 diferencia al caf\u00e9 liofilizado 100% colombiano del caf\u00e9 soluble com\u00fan? Aqu\u00ed te lo contamos.<\/em><\/p><p data-path-to-node=\"3\"><b data-path-to-node=\"3\" data-index-in-node=\"0\">1. Su elaboraci\u00f3n<\/b> La primera diferencia est\u00e1 en la manera en que ambos se obtienen.\nTanto el caf\u00e9 liofilizado como otros caf\u00e9s solubles parten de un extracto de caf\u00e9 del que posteriormente se debe retirar toda el agua. En el caso del caf\u00e9 liofilizado, este extracto se congela y luego se lleva a una c\u00e1mara de vac\u00edo, donde el agua pasa directamente del estado s\u00f3lido al gaseoso mediante un proceso conocido como sublimaci\u00f3n. De esta manera, el caf\u00e9 se deshidrata a bajas temperaturas y conserva mejor sus caracter\u00edsticas originales.<\/p><p data-path-to-node=\"4\">En otros caf\u00e9s solubles, uno de los m\u00e9todos m\u00e1s utilizados es el secado por aspersi\u00f3n o spray drying, en el que el extracto de caf\u00e9 se pulveriza en una corriente de aire caliente para retirar r\u00e1pidamente el agua. Es un proceso eficiente, pero la exposici\u00f3n a temperaturas elevadas puede afectar una parte de los compuestos arom\u00e1ticos m\u00e1s vol\u00e1tiles del caf\u00e9.<\/p><p data-path-to-node=\"5\"><b data-path-to-node=\"5\" data-index-in-node=\"0\">2. El cuidado del aroma<\/b> El aroma es una de las caracter\u00edsticas que m\u00e1s identificamos cuando disfrutamos una taza de caf\u00e9. Por eso, conservar sus compuestos arom\u00e1ticos es uno de los grandes retos que asumimos en Buencaf\u00e9 durante la elaboraci\u00f3n de nuestro caf\u00e9 100% colombiano.<\/p><p data-path-to-node=\"6\">El caf\u00e9 liofilizado 100% colombiano cuenta con una una mayor retenci\u00f3n de compuestos arom\u00e1ticos en caf\u00e9s liofilizados frente a caf\u00e9s obtenidos mediante secado por aspersi\u00f3n. \u00bfY eso qu\u00e9 significa? Al preparar una taza de caf\u00e9 liofilizado, podemos disfrutar de una experiencia sensorial m\u00e1s cercana a las caracter\u00edsticas del caf\u00e9 de origen que dio vida al producto.<\/p><p data-path-to-node=\"7\"><b data-path-to-node=\"7\" data-index-in-node=\"0\">3. Experiencia de sabor m\u00e1s fiel<\/b> Como el aroma y el sabor est\u00e1n estrechamente relacionados, cuando se conservan mejor los compuestos que aportan las caracter\u00edsticas sensoriales del caf\u00e9, tambi\u00e9n se puede lograr un perfil de taza much\u00edsimo m\u00e1s completo.<\/p><p data-path-to-node=\"8\">El caf\u00e9 liofilizado 100% colombiano conserva de mejor manera atributos como el sabor y el balance del caf\u00e9. En otras palabras, el objetivo no es simplemente retirar el agua para obtener un producto soluble y pr\u00e1ctico, sino hacerlo cuidando al m\u00e1ximo las caracter\u00edsticas que hacen especial a cada caf\u00e9.<\/p><p data-path-to-node=\"9\"><b data-path-to-node=\"9\" data-index-in-node=\"0\">4. Presentaci\u00f3n<\/b> La cuarta diferencia se ve a simple vista. El caf\u00e9 obtenido mediante liofilizaci\u00f3n suele presentarse en forma de gr\u00e1nulos o cristales de mayor tama\u00f1o y estructura porosa, mientras que el caf\u00e9 soluble producido mediante secado por aspersi\u00f3n suele tener una apariencia m\u00e1s fina y pulverizada. Esta estructura es consecuencia directa de las diferencias entre ambos procesos de secado.<\/p><p data-path-to-node=\"10\"><b data-path-to-node=\"10\" data-index-in-node=\"0\">4.
