caf\u00e9 liofilizado 100% colombiano inicia con un ritual tan \u00edntimo como el primer sorbo de caf\u00e9 del d\u00eda. En la ladera de una monta\u00f1a de El P\u00e1ramo, en Santander, \u00f3 en una vereda de Montenegro, en el Quind\u00edo.<\/span><\/i><\/p><p>Manos expertas y cuidadosas, siembran en la tierra h\u00fameda de muchos lugares de Colombia la semilla. Con la paciencia que solo el campo sabe dar, los caficultores colombianos, propietarios de Buencaf\u00e9 cuidan, entre el sol cambiante y la neblina que abraza las monta\u00f1as, de sus cultivos, con una mezcla de conocimientos heredados y adquiridos que hacen del producto de su esfuerzo uno reconocido y apreciado en m\u00e1s de 60 pa\u00edses alrededor del mundo.<\/p><p><span style=\"font-weight: 400;\"><p>Pasar\u00e1n muchos meses hasta el momento en que las cerezas de caf\u00e9 maduren y est\u00e9n listas. Ese d\u00eda, desde temprano en la ma\u00f1ana, el ensordecedor ruido de un grupo de trabajadores que cosechan grano a grano inundar\u00e1 las fincas. El cuidadoso proceso en que manos expertas seleccionan uno a uno los granos en su punto exacto, la materia prima que pronto se convertir\u00e1 en caf\u00e9 liofilizado 100% colombiano est\u00e1 listo.<\/p><\/span><\/p><p><span style=\"font-weight: 400;\">Los inmensos costales de yute ser\u00e1n llenados y cosidos, se cargar\u00e1n en m\u00e1quinas o tenaces bestias y descender\u00e1n de la monta\u00f1a hacia las cooperativas, distribuidas en diferentes regiones del pa\u00eds. Aqu\u00ed aparece Almacaf\u00e9, como un puente entre campo e industrial que recolecta los granos verdes de caf\u00e9 en cada una de las cooperativas, y las junta con los frutos de otras manos, de otras fincas, de otras historias que comparten una misma vocaci\u00f3n. All\u00ed es recibido, pesado, almacenado y comienza a formar parte de algo m\u00e1s grande.<\/span><\/p><p><span style=\"font-weight: 400;\">Una vez en Buencaf\u00e9, el producto de la tierra, el sol y el cuidado humano, entra en el territorio de la ciencia. Aqu\u00ed, el grano atraviesa 8 procesos, cada uno fundamental para garantizar la calidad del caf\u00e9 100% colombiano:<\/span><\/p><ol><li><span style=\"font-weight: 400;\">Durante <\/span><b>la tostaci\u00f3n<\/b><span style=\"font-weight: 400;\">, los granos despiertan su \u201calma\u201d. Liberan su aroma, notas, matices y car\u00e1cter. Luego de esto, es molido, y est\u00e1 listo para transformarse.<\/span><\/li><li><span style=\"font-weight: 400;\">En <\/span><b>la extracci\u00f3n<\/b><span style=\"font-weight: 400;\">, el agua pura atraviesa el caf\u00e9 molido y arrastra consigo su esencia, convirti\u00e9ndose en un extracto l\u00edquido oscuro, intenso y soluble.<\/span><span style=\"font-weight: 400;\"><br \/><\/span><\/li><li><span style=\"font-weight: 400;\">La magia empieza durante <\/span><b>la crioconcentraci\u00f3n<\/b><span style=\"font-weight: 400;\">. A temperaturas bajas, el agua comienza a separarse en forma de hielo, dejando atr\u00e1s un extracto cada vez m\u00e1s concentrado, m\u00e1s puro.<\/span><\/li><li><span style=\"font-weight: 400;\">Luego, ese l\u00edquido espeso es <\/span><b>aireado<\/b><span style=\"font-weight: 400;\"> en un proceso llamado espumaci\u00f3n que lo vuelve ligero y poroso, algo que es fundamental para su solubilidad.<\/span><\/li><li><span style=\"font-weight: 400;\">Posteriormente, el caf\u00e9 es sometido a <\/span><b>congelaci\u00f3n extrema. (-50 \u00b0C).<\/b><\/li><li><span style=\"font-weight: 400;\">Ahora, el caf\u00e9 se <\/span><b>fragmenta<\/b><span style=\"font-weight: 400;\"> en peque\u00f1os granos y se <\/span><b>clasifica <\/b><span style=\"font-weight: 400;\">con precisi\u00f3n para llevarlo al siguiente paso.<\/span><\/li><li><b>La liofilizaci\u00f3n.<\/b><span style=\"font-weight: 400;\"> Bajo condiciones de vac\u00edo, el hielo contenido en el caf\u00e9 pasa directamente de s\u00f3lido a vapor en un fen\u00f3meno casi invisible llamado sublimaci\u00f3n dando como resultado un cristal de caf\u00e9 que conserva intacto su sabor, su aroma, su origen con extraordinaria complejidad.<\/span><\/li><li><span style=\"font-weight: 400;\">Antes de salir al mundo, expertos <\/span><b>catadores lo eval\u00faan<\/b><span style=\"font-weight: 400;\">. Lo prueban, lo analizan, lo validan para que cada lote est\u00e9 a la altura de lo que representa: no s\u00f3lo calidad, sino identidad del producto agr\u00edcola emblema de Colombia: El caf\u00e9.<\/span><\/li><\/ol><p><span style=\"font-weight: 400;\">Finalmente, el caf\u00e9 es empacado y emprende un nuevo viaje. De los Andes colombianos a puertos lejanos. De ah\u00ed, a m\u00e1s de 60 pa\u00edses. Cruza oc\u00e9anos, cambia de idioma, de cultura, de mesa, de etiquetas y se convierte en m\u00faltiples caf\u00e9s de marca blanca con el sello 100% colombiano.<\/span><\/p><p><span style=\"font-weight: 400;\">Un d\u00eda, en alg\u00fan rinc\u00f3n del mundo, alguien abre un frasco. Agrega agua caliente y, probablemente sin darse cuenta, estar\u00e1 dando sentido a una traves\u00eda que empez\u00f3 en una monta\u00f1a, en una semilla, en las manos de las m\u00e1s de 556.000 familias caficultoras de Buencaf\u00e9.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section
