The secret behind our premium soluble coffee

2020 brings a new era of high-end instant coffees. Many soluble coffees are made with sub-par beans and lose their aromas and flavors when transformed into an instant product. However, we at Buencafé are proud to unveil our state-of-the-art system that enables us to preserve all the flavors and aromas of freshly roasted and brewed coffee.

What is Buencafé’s bew technology? 

The process begins on the farm, where only perfectly ripe Arabica coffee cherries are harvested on Colombia’s mountainside plantations. 

After removing the pulp and the parchment, the beans are brought to our facility and are carefully roasted with Buencafé’s new technology. The secret to good roasting lies in not degrading any of the volatile compounds, which are essential in allowing the coffee’s quality to shine. When this happens, appetising aromas and flavors can be captured and maintained.

The next stage is extraction. Thanks to Buencafé’s new technology, the coffee’s aromatic compounds are protected from high-temperature water during brewing. We then freeze the extract to below -50ºC (-58ºF). The ice is finally removed by sublimation, meaning we transform it directly into steam, leaving us with a freeze-dried soluble coffee.

Finally, the product is carefully evaluated and cupped by our highly qualified Quality Control Team to ensure that it meets our standards and those of our clients. 

The result? All the complex and rich compounds inherent to the coffee will be released only after the consumer prepares a cup of Buencafé’s freeze-dried instant coffee at home or in the office. Carlos Osorio, our Director of Research and Development, explains that our coffees “very much resemble the cupping profile of a roasted coffee, not a traditional instant one.”

Buencafé’s new technology is the process behind our two luxurious product lines,Lineage and Coffage. These were created with three aims in mind: satisfy sophisticated palates, offer consumers convenience when preparing the drink, and have a positive social impact for coffee farmers. 

These products are available with three different roasting profiles: light, medium, and dark. Each roast gives the coffee a distinctive character, from delicate notes to a strong body. Lineage boasts a vibrant aroma and a pronounced body. Coffage sets the bar even higher with an intense aroma, subtle and refreshing citrus notes, a mild sweetness, a touch of spices, and a much higher natural acidity compared to Lineage. 

“The Coffage product line is the highest quality one,” says Osorio, “with a perfect balance that makes it very difficult to tell the difference between these freeze-dried coffees (or extracts) and a freshly brewed cup made of recently roasted coffee.”

Meeting Customer Demands for Premium Soluble Coffee

Premium coffee is a trend driven by the under-40s, with the NCA’s National Coffee Drinking Trends 2019 states that millennials “continue to be a formidable force in the coffee market.” Businesses need to pay attention to this market sector: by 2030, millennials will outnumber non-millennials by 22 million just in the USA.

In the last few years, the coffee industry has also witnessed an increase in coffee consumers interested in learning about the ethical values behind their cup of coffee. US market research firm Nielsen found that 73% of millennials would pay more for sustainable products. For many consumers, transparency and traceability are considered as important as the quality of the product itself.

This means that all the profits generated from Buencafé’s exports are invested in the National Coffee Fund, which in turn is used for programs to improve farmers’ welfare and boost growth. It finances research, health services, infrastructure development, and extension services such as education, training, technical assistance, and economic support for Colombian coffee farmers.
